breakfast in bed

you’ll need:
pancake mix, milk, vanilla, cinnamon, a dash of salt

recipe:
follow the instructions on your box (i used betty crocker’s). if yours doesn’t come with instructions, google that shit. in a large bowl, mix flour with milk and throw in a dash of salt, one tsp of vanilla essence, and as much cinnamon as you like. be careful not to whisk the mixture for too long to ensure your pancakes come out fluffy. for this, you’ll need a keen eye + experience – i can’t help you here.

once you’ve got that settled, let the batter sit in the refrigerator for an hour or so. next, scoop a dollop of butter onto your skillet. make sure the fire is on low. i use a ladle to gauge, so each pancake is of equal size. when you’ve got one side sizzling (bubbles will form on the surface of your pancake), flip it over.

by now you’d be starving (unless you’ve snacked on uglier pancakes along the way) (i totally did), so stack ‘em up and serve with lots of maple syrup and lots of assorted berries.
